This fresh and colourful red quinoa salad is packed with flavour and nutrients, combining creamy avocado, tangy feta, and the burst of pomegranate seeds. With roasted almonds for crunch and a mix of herbs for extra freshness, this salad is perfect to take to any gathering!
Ingredients:
- ¾ cup red quinoa
- 1 large avocado, diced
- ¼ small red onion, finely chopped
- ¼ mint, finely chopped
- ¼ cup Italian parsley, finely chopped
- ⅓ cup roasted almonds, roughly chopped
- 100g feta, crumbled
- Pomegranate seeds
Dressing
- ¼ cup olive oil
- 3 Tbsp apple cider vinegar
- 1 tsp dijon mustard
- ½ tsp maple syrup or honey
- Salt and pepper to taste
Method:
- Cook the quinoa as per the packet instructions. Once cooked, let it cool completely.
- In a large bowl, combine the cooled quinoa with the dressing, red onion, half of the pomegranate seeds, and half of the chopped herbs. Toss well.
- Gently fold in the diced avocado, almonds, and crumbled feta.
- Top with the remaining herbs and pomegranate seeds.
Serves 6 as a side.
