Crunchy Red Quinoa Salad with Avocado, Almonds, and Pomegranate

This fresh and colourful red quinoa salad is packed with flavour and nutrients, combining creamy avocado, tangy feta, and the burst of pomegranate seeds. With roasted almonds for crunch and a mix of herbs for extra freshness, this salad is perfect to take to any gathering!

Ingredients:

  • ¾ cup red quinoa
  • 1 large avocado, diced
  • ¼ small red onion, finely chopped
  • ¼ mint, finely chopped
  • ¼ cup Italian parsley, finely chopped
  • ⅓ cup roasted almonds, roughly chopped
  • 100g feta, crumbled
  • Pomegranate seeds

Dressing

  • ¼ cup olive oil
  • 3 Tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • ½ tsp maple syrup or honey
  • Salt and pepper to taste

Method:

  1. Cook the quinoa as per the packet instructions. Once cooked, let it cool completely.
  2. In a large bowl, combine the cooled quinoa with the dressing, red onion, half of the pomegranate seeds, and half of the chopped herbs. Toss well.
  3. Gently fold in the diced avocado, almonds, and crumbled feta.
  4. Top with the remaining herbs and pomegranate seeds.


Serves 6 as a side.
